Kadınbudu Köfte
Say it: kah-duhn-boo-doo kerf-teh
Soft oval meatballs combining cooked and raw mince with rice, onion and spices, coated in egg and flour before shallow-frying. The name literally means ‘lady’s thigh köfte’.
How to order it
Best served freshly fried but not piping hot. Look for a loose, tender interior where the grains of rice remain visible.
